Instructions
Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins and lightly dust with flour, tapping out any excess.
In a microwave-safe bowl, combine the butter and white chocolate. Microwave in 20-second intervals, stirring in between, until smooth and fully melted.
Whisk in the powdered sugar until well combined. Add the eggs and egg yolks, whisking until the mixture is smooth and pale.
Stir in the lemon juice and lemon zest, then gently fold in the flour and a pinch of salt just until incorporated. Do not overmix.
Divide the batter evenly among the prepared ramekins and place them on a baking sheet.
Bake for 12–14 minutes, or until the edges are set but the centers are slightly jiggly when gently shaken.
Remove from the oven and let cool for 1 minute. Run a knife around the edges of each ramekin and carefully invert onto serving plates.
