Ingredients

  • 4 slices thick-cut bread (Italian, sourdough, or Texas toast)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 tbsp unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh parsley (or ½ tsp dried)
  • Pinch of salt
  • Optional: grated Parmesan for extra flavor 

Instructions

  • ·         Make garlic butter: In a small bowl, mix the softened butter, minced garlic, parsley, and a pinch of salt. Add a little Parmesan if desired.

    ·         Spread garlic butter on one side of each bread slice. Make sure to coat all the way to the edges for maximum crispiness!

    ·         Assemble the sandwiches: Place half the shredded mozzarella and cheddar on the unbuttered side of one slice, then top with another slice (buttered side facing out). Repeat for the second sandwich.

    ·         Heat a skillet over medium-low heat. Place the sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently, until golden brown and the cheese is melted.

    ·         Remove from heat, let rest for 1 minute, then slice and serve hot! Add marinara sauce for dipping if you like.

Notes

  • Use freshly grated garlic for the most aromatic garlic butter.

  • Shredded cheese melts more evenly than slices.

  • Press the sandwich with a spatula during cooking for extra crunch.

  • For best results, use a heavy-bottomed skillet like cast iron.

  • To avoid burning, cook on medium-low heat and watch carefully.

  • Optional: sprinkle Parmesan on the outside of the bread for a crispy cheese crust.
