This easy tater tot casserole is a classic weeknight bake that layers savory ground beef, mixed vegetables, creamy mushroom sauce, and sharp cheddar cheese, all topped with crispy golden tater tots. Ready in under an hour, it’s perfect for busy nights and even better as leftovers.


Ingredients

  • ·         1 lb ground beef

    ·         1 small onion, diced

    ·         2 cloves garlic, minced

    ·         1 can (10.5 oz) condensed cream of mushroom soup

    ·         1/2 cup milk

    ·         1 1/2 cups frozen mixed vegetables (peas, carrots, corn)

    ·         2 cups shredded cheddar cheese, divided

    ·         1 package (32 oz) frozen tater tots

    ·         Salt and pepper to taste

    ·         Fresh parsley for garnish (optional)


Instructions

  • Preheat your oven to 375°F (190°C)

    In a large skillet over medium heat, cook the ground beef with diced onion and garlic until beef is browned and cooked through. Drain excess fat

    Stir in the cream of mushroom soup, milk, and frozen mixed vegetables. Season with salt and pepper. Mix well and simmer for 2-3 minutes

    Transfer the beef and vegetable mixture into a greased 9×13-inch baking dish. Spread it out evenly

    Sprinkle 1 cup of shredded cheddar cheese over the beef mixture

    Arrange tater tots in a single layer over the top of the cheese

    Bake uncovered for 35-40 minutes or until tater tots are crispy and golden brown

    Sprinkle remaining cheese over the top and return to oven for 5 more minutes until cheese is melted

    Remove from oven and let rest for a few minutes before serving. Garnish with chopped parsley if desired
