Ingredients

Instructions

  • Cook the pasta according to package directions until al dente, then drain and rinse under cold water.
  • Combine the cooled pasta, diced chicken, bell pepper, carrots, red onion, celery, olives, feta, and parsley in a large bowl.
  • Whisk together orange juice, olive oil, honey, Dijon mustard, apple cider vinegar, salt, and pepper in a small bowl until dressing is smooth.
  • Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
  • Cover and refrigerate for at least 30 minutes to let the flavors meld.
  • Serve chilled, with extra parsley sprinkled on top if desired.
